Chef Jethro, the founder of Copedo Culinary Experience, commenced his culinary career at the age of 16. Over the past 19 years, he has developed and refined his skills, expertly crafting innovative and delectable dishes on the Sunshine Coast.

By choosing to work in some of the most prestigious restaurants on the Sunshine Coast, he has successfully honed his culinary skills — achieving recognition as a highly esteemed chef.

Chef Jethro has recently expanded his culinary expertise to include European-style cuisines, building on a foundation deeply rooted in Asian fine dining.

Jethro spent over 12 years immersed in Asian fine dining — including five defining years at one of the Sunshine Coast's most respected culinary institutions. It was here that his mastery of bold, vibrant flavours truly took shape.

During this time he developed a deep mastery of Thai cuisine, took on the creation of daily specials, and produced dishes that featured in national food magazine shoots.

A culinary journey to Thailand with the team gave Jethro a first-hand understanding of the street food culture and bold flavour traditions that now define his style — vibrant, layered and unmistakably his own.

Chef Jethro spent five defining years at Spirit House — one of the Sunshine Coast's most celebrated Asian fine dining restaurants — where he mastered Thai cuisine, created daily specials and contributed to national food magazine features. This foundation defines every menu he creates today.
